This chapter, part of a broader study on U.S. cheddar opportunities in 17 international markets, highlights South Korea’s growing demand for cheddar-type cheeses, driven by foodservice expansion, fusion cuisine trends, and favorable trade terms under KORUS. While New Zealand leads in import share, the U.S. holds a strong position with growth opportunities in processed slices, snack formats, and fusion dishes. Success will depend on competitive pricing, extended shelf life, and continued buyer education.
