On July 8, USDEC will hold the second webinar in its Ingredient Immersion series in Southeast Asia. This session will focus on manufacturing differences between dairy proteins and plant proteins.
The differences in nutritional quality between protein sources are well-documented (and heavily in favor of dairy), but how they differ in terms of processing-particularly from a sustainable production angle-is less so.
Dr. Rohit Kapoor, vice president of product research, DMI, will outline the results of a first-of-its kind landscape study completed in 2020 that examines commercial processing methods and steps and the resulting environmental implications of dairy and plant proteins, highlighting dairy proteins as a clean-label, planet-friendly option for food and beverage manufacturers.
